A summer vegetable soup to be enjoyed with friends…


Ingredients for 6 litres of soup

You need about 300g of vegetables (2 good handfuls)

  • Green beans
  • Shelled white beans
  • Shelled kidney beans
  • Runner beans
  • Butter beans
  • 2 potatoes
  • 4 tomatoes, skinned
  • 2 aubergines
  • 2 courgettes, deseeded
  • Carrots
  • Broad beans
  • salt, pepper
  • 250g macaroni
  • grated gruyère
  • grated parmesan


Ingredients for the pistou

  • 1 large bunch of basil
  • 3 cloves of garlic
  • Olive oil



  • Dice all the fresh vegetables, cover with water and season with salt and pepper. Simmer on a low heat for 1 to 2 hours; the vegetables must be cooked!
  • During this time, prepare the pistou by pounding the basil leaves and the garlic in a mortar and then adding the olive oil little by little.
  • When the soup is cooked add the macaroni (cook for 10 minutes).
  • Pour the pistou into the soup just before serving. Add grated gruyère or parmesan to taste.
